The Best (and Easiest) Butter Chicken Recipe You’ll Find

Easy Butter Chicken Serves 4 

Recipe by Dee Gullan of D.Kos Unique Culinary Experiences. 

Tsp = teaspoon

Tbsp = tablespoon


4 large chicken breasts – cut into bite size pieces 

1 onion – finely chopped

3 tsp cumin seeds

4 tsp crushed ginger and garlic 

2 tsp masala curry mix 

1tsp turmeric

1⁄2 tsp chilli flakes – optional

1⁄4 cup tomato puree

1 cup (250ml) cream 

1 tsp sugar

15g fresh coriander 

Olive oil

Salt & pepper 

Here’s how 

  • Cut the chicken and onion 

  • In a large pan heat 2 Tbsp oil and fry the onions for 3-4 minutes until 

  • Add in the cumin seeds and fry while stirring for 1 minute 

  • Add the chicken, ginger & garlic, masala curry powder, turmeric, chilli flakes

puree and sugar and fry for 5 minutes until the chicken has a little colour 
and coated in the spices 

  • Add the cream and simmer on low for 8-10 minutes stirring occasionally 
or until the chicken is cooked through
  • Serve on a bed of basmati rice (see below – how to cook the perfect rice) 

  • Garnish with fresh coriander

Serve with naan, roti or rice

Serve with a tomato and onion sambal

Serve with yogurt mixed with grated cucumber and pinch of salt to make a raita 

How to cook the perfect basmati rice

  • Place 1 cup basmati rice in a pot and add 2 cups water – NB use the same cup to measure the rice and water (no need to pre soak the rice) 

  • Add 1 tsp salt 

  • Bring to the boil and once boiling put the lid on and turn the heat to low
  • Do not touch for at least 10 -12 minutes 

  • Once the water has all been absorbed, turn off the heat, gently fluff with a 
fork and then leave the lid to keep warm until ready to serve
