It’s the dish that has taken the internet by storm. Who would’ve thought that a simple block of feta cheese could transform into a pasta recipe that just might break the Internet?
All you need are five simple ingredients for this easy, cheesy recipe for Baked Feta Pasta, with thanks to Dee Gullan for making this (easy) masterpiece.
* 2 cups cherry tomatoes
* 3 tablespoons of Olive Oil
* ½ cup of White Wine Vinegar or Vegetable Stock
* 1 block of Feta Cheese
* 350g uncooked Pasta of your choice
* Salt and pepper to taste
* Fresh basil for serving
Preheat your oven to 200°c and grease your baking dish.
In a 31.5×19.5x5cm baking dish, stir the cherry tomatoes, 2 tablespoons of olive oil and ½ teaspoon of black pepper together.
Push tomatoes to the sides of the dish, placing the block of feta cheese in the centre.
Drizzle the remaining olive oil over the feta cheese.
Drizzle white wine vinegar or veggie stock around the feta before baking until the cheese has softened and tomatoes are roasted.
The average baking time is 30 minutes.
While the feta is baking, bring a large pot of salted water to a boil. Add the pasta and cook until al dente – 10 to 12 minutes.
Drain the pasta and set it aside.
Remove the baking dish from the oven and using a large spoon, mash the softened feta and stir it together with the tomatoes.
Add the drained pasta to the baking dish, stirring well to combine.
Garnish the pasta with the basil and serve.
